This Low-Fat Funfetti Cheesecake Ice Cream Pie is the perfect guilt-free dessert. It is made with a reduced-fat pie crust and a nearly fat-free funfetti cheesecake ice cream.

You guys, I have been chomping at the bit to share this recipe with you since I made it, which was only Sunday, but I just couldn’t wait. This Low-Fat Funfetti Ice Cream Pie is by far one of the best tasting “skinny” recipes I have done.
It is NEARLY fat-free. The only bit of fat comes from the ¼ C of vanilla cake mix and a little bit from the graham cracker crust. Let’s talk crust for a minute. I was able to find a pre-made graham cracker crust at my local grocery store. If you are unable to find one, I would suggest to make one with a box of reduced-fat graham crackers and a little bit of melted butter.
You might be wondering how am I able to make a nearly fat-free ice cream filling. The filling is made of a no-churn ice cream base that combines fat-free sweetened condensed milk and fat-free Cool Whip. When frozen, they create a wonderful ice cream. I found the fat-free sweetened condensed milk at Target. My grocery store did not carry it, but look around! I used Eagle brand and it has a green label.
I really like the hint of cream cheese flavor, I’ve mentioned that cheesecake is my most favorite dessert. I mixed in half a block of fat-free cream cheese and one package of dry mix sugar-free, fat-free cheesecake pudding. If you can’t find that flavor of pudding mix, you can try substituting vanilla. Just to get a bit of extra funfetti flavor, I also added a ¼ cup of dry vanilla cake mix. Plus the sprinkles; you gotta have the sprinkles.
It is important to build this recipe in the order listed because you don’t want to end up with a lumpy filling. The cream cheese must be whipped first until it is smooth. Once it has been whipped, then you can add the sweetened condensed milk and the dry powder from the pudding and the cake mix. You need to be sure to blend this well until everything is smooth. The Cool Whip will be added second to last, and followed finally by the sprinkles.
AlI you have to do is throw this pie in the freezer for a couple hours and then try not to eat the whole thing, it will be difficult.
When I was photographing this recipe, I almost couldn’t stop eating it. At the time I was not sure how many points (WW) this recipe was. So I actually DID stop myself; I was amazed. I went to my computer and entered the recipe in my Weight Watchers app to determine the points by the slice. I was kinda proud of myself, because I was ready to devour the whole pie!
Weight Watcher points: For the whole pie is 72 points. So if you cut smaller slices, and get 10 slices instead of 8, it is 7 points a slice. If you only slice it into 8 pieces, then it will be 9 points a slice. As far as points go, it is still on the higher side, but if I made the full-fat version, you don’t even wanna know how much worse it would be. So here is my suggestion: make this into ice cream popsicles instead! That way you can divide the total points by the number of popsicles. This is a much easier way to control the portion size and also reduce the points. I promise though, this dessert is worth it!
- 1 Reduced-fat prepared graham cracker crust
- 4 oz Fat-free cream cheese, softened
- 1 Can Fat-free sweetened condensed milk (14oz)
- 1 pk Fat-free sugar-free cheesecake pudding mix (instant) - or vanilla
- ¼ C Vanilla cake mix
- 8oz Cool Whip Free
- ¼ C Sprinkles
- Whip cream cheese on medium speed until light and fluffy.
- Add the sweetened condensed milk, the dry powder from the pudding and the cake mix. Beat until very well blended.
- Add the Cool Whip last and beat until mixture reaches a smooth consistency. Fold sprinkles into batter. Reserve some sprinkles for the top of the pie.
- Pour filling into prepared pie crust. Freeze for 4-6 hours until firm. Remove pie from the freezer 20 minutes before serving in order to allow it to thaw slightly for easy cutting.
