You guys! It’s finally Memorial day weekend, but you already know that! I love long weekends, it’s like I LIVE for a long weekend. Plus my mom is coming into town for only a couple days and I’ve got some fun stuff planned! What are you doing this weekend?

First thing up on my weekend plans is food, lots and lots of food. I love to bake and cook #allthethings over holiday weekends.

What I should be making this weekend is this Funfetti Cookie Dough Ice Cream Pie. It combines all your favorite things: cookie dough, ice cream, cake batter and lots of sprinkles.

Back in January I made a Skinny Funfetti Ice Cream Pie and I was so impressed that it was so good, yet skinner than your traditional dessert. So I immediately went to work creating the opposite of a skinny dessert. Can you blame me?

At first glance, it might not appear that this is actually a cookie dough ice cream, but that is because I beat the cookie dough into the ice cream base. Do you know why? Because that means you get cookie dough in every bite! You’re welcome. I don’t know about you, but whenever I get a pint of cookie dough ice cream, I usually just dig out the cookie dough.

Let’s break it down a little further. The crust is a graham cracker crust with sprinkles mixed in. I love the pop of color, and wish I thought of it myself, but I first saw it on the Sprinkles Bakes blog. and Lindsay also did it with Oreos in the Strawberry Milkshake Cheesecake (LOVE). You will also notice the type of sprinkles I used are not the tiny nonpareil sprinkles. The reason for this is that the coating actually melts of very easily and you will end up with a weird rainbow swirl that blends together and isn’t nearly as pretty.

The ice cream filling is an easy, no-churn ice cream base made with sweetened condensed milk and Cool Whip. For the funfetti flavor, I used powdered vanilla cake mix. Once that was all blended, I added some prepared eggless cookie dough and blended it into the ice cream. It was super easy.

I wanted to top this ice cream pie with a little bit of whipped cream, so I made some up real quick. I love homemade whipped cream so much! If you aren’t up for it, just use some additional Cool Whip.

This needs a few hours to freeze up, so I always suggest making it in advance. I like to let it sit out for about 15 minutes before I cut into to because it just makes it easier. I also find it very helpful to use a springform pan, but that isn’t necessary either. You can make this in any 9” freezer-safe pan.

Funfetti Cookie Dough Ice Cream Pie

Ingredients

For the Cookie Dough:

  • ½ C Unsalted butter (1 stick), softened
  • C Light brown sugar
  • ½ C Granulated sugar
  • 1 ¼ C All-purpose flour
  • ¼ tsp Salt
  • 2 tsp Pure vanilla extract
  • 1 tbsp Milk
  • ½ C Mini chocolate chips

For the Pie:

  • 2 C Graham cracker crumbs
  • 6 tbsp Unsalted butter
  • ¼ C Sprinkles
  • 1 can Sweetened condensed milk (14oz)
  • 1 container Cool Whip (8oz), thawed
  • ¾ C Dry vanilla cake mix
  • 1 C Heavy whipped cream
  • ½ C Powdered sugar

Instructions

For the Cookie Dough:

  1. Allow butter to come to room temperature or microwave for 10-15 seconds.
  2. Combine butter and both sugars in a medium-sized bowl. Mix with a handheld mixer until smooth. All chunks of sugar and butter should be broken up.
  3. Add flour and salt. Mix just until combined. Mixture will be crumbly. Add vanilla extract. If dough is dry, add some milk 1 tsp at a time. Mix until dough is soft.

For the Pie:

  1. Thaw Cool Whip in advance.
  2. Grind Graham crackers into a fine crumb using a food processor or blender. Put crumbs in a microwave safe bowl. Add butter and microwave for 45-60 seconds until butter is melted. Stir to coat graham crackers in butter.
  3. Line the bottom of a 9”spring form pan with tin foil. Press crust into the bottom of the pan and gently push it against the sides to form the crust. Refrigerate until the filling is ready.
  4. Beat the sweetened condensed milk and the dry cake mix powder. Beat until very well blended.
  5. Add the Cool Whip last and beat until mixture reaches a smooth consistency. Add cookie dough in small chunks, about 1 tablespoon in size. Beat until cookie dough is mixed it. It does not have to be smooth.
  6. Fold sprinkles into batter. Reserve some sprinkles for the top of the pie.
  7. Pour filling into prepared pie crust. Freeze for 30 minutes before adding whipped cream.
  8. To prepare the whipped cream, whip heavy cream on medium high speed for several minutes until bubbly.
  9. Add powdered sugar and beat on medium high until stiff peaks form. Spread or pipe it on top of pie.
  10. Freeze for 4-6 hours until firm. Remove pie from the freezer 15 minutes before serving in order to allow it to thaw slightly for easy cutting.

    I also dig the mix-ins out of ice cream. Makes me wonder why I just don’t buy the mix-ins and freeze them!
    This ice cream pie is pretty much where it’s at. So good!!
