Lucky Charms Marshmallow Ice Cream

This Lucky Charms Marshmallow Ice Cream recipe is a cereal milk flavored homemade vanilla ice cream that is layered with marshmallow fluff and Lucky Charms marshmallows. It’s a gooey, sweet and an all together magical dessert!

Homemade Lucky Charms Ice Cream with Marshmallow

You know it’s a special occasion when I bust out my ice cream maker and today we’re making something extra special, Lucky Charms Ice Cream! The base of the ice cream is a basic cereal milk flavored vanilla ice cream (part heavy cream and part-whole milk). It’s layered with the marshmallow fluff and Lucky Charms marshmallows.

Does anyone else separate the Lucky Charms into marshmallows from the cereal? What I noticed is that the ratio of cereal to marshmallows needs some serious attention. Although I don’t mind the cereal without the marshmallow, when I pour a cup of Lucky Charms I gotta get some nice colorful charms in my cereal.

This Cereal Milk Ice Cream is Inspired by Salt & Straw

I recently learned that one of my favorite ice cream shops, Salt and Straw’s released a monthly flavor that is called Pot of Gold and Rainbows, which is their version of a cereal milk ice cream loaded with Lucky Charms marshmallows. I obviously got a couple of pints to try so I could recreate this at home.

My version of this ice cream is slightly different in that it’s also loaded with a lot of marshmallow fluff. The marshmallow fluff doesn’t freeze all the way which is actually kind of nice because it helps keep the ice cream soft! This is the same ice cream base I used in my Peanut Butter Cup S’mores Ice Cream.

Ingredients for Ice Cream

  • Whole milk – this is first heated together with the sugar and salt, chilled then added to the ice cream batter.
  • Granulated sugar
  • Pinch of salt
  • Lucky Charms Cereal– you’ll need both the cereal and the marshmallows
  • Heavy whipping cream
  • Pure vanilla extract
  • Marshmallow Crème– I just Jet-Puffed, but marshmallow fluff also works

Where Can I Buy Lucky Charms Marshmallows?

You can also buy dehydrated marshmallows and skip the cereal altogether. While you can get offshoot brands on Amazon, I can’t vouch for the quality, so I’d rather just buy the cereal. You only need one box of cereal for this recipe and you’ll have plenty leftover.

Since I originally posted this recipe, the Lucky Charms brand released a limited-edition “Just the Marshmallows” pack. You can find it on Amazon but I’ve heard you can also find them in grocery or big box stores.

How To Make Homemade Lucky Charms Ice Cream

  1. Prep: Pre-freeze your ice cream maker attachment as directed. Sometimes this needs to be done a day in advance, so double-check the instructions.
  2. Separate the cereal: Separate the dehydrated marshmallows from the Lucky Charms cereal. You’ll need 1 cup of the cereal and 1 cup of the marshmallows.
  3. Heat the milk and sugar: In a medium-sized saucepan, heat 1 cup whole milk with ¾ cups sugar and a pinch of salt. Stir over medium-high heat just until it starts to bubble and the sugar is dissolved. Let the mixture cool for at least 30 minutes.
  4. Grind up the cereal: Take 1 cup of the Lucky Charms cereal, (without the marshmallows) and pulse in a food processor until it’s a fine crumb consistency.
  5. Combine with the cream: Next combine the heavy whipping cream together with the milk mixture, cereal crumbs, and vanilla extract. Whisk to combine then refrigerate until it’s the mixture is cooled completely.
  6. Strain the cream: When you are ready to make the ice cream, strain the liquid base through a fine sieve to catch the cereal that did not absorb into the milk.
  7. Churn the cream: Once the ice cream maker is chilled and ready to go pour the cream base into ice cream maker and start churning. Chun on low speed for 10 minutes and increase to medium speed for another 5-10 minutes until the ice cream solidifies to a thick, soft-serve consistency.
  8. Mix in the marshmallow: Prepare a freezer-safe container and you’ll divide the ice cream into thirds. Layer the bottom of the pan with 1/3 of the ice cream, then add a few spoonsful of marshmallow creme and gently swirl with a knife. Then sprinkle in 1/3 of the Lucky Charms marshmallows. Repeat this step two more times. You can use as many marshmallows and cereal charms as desired.
  9. Chill: Freeze for 4-6 hours before serving.

  • 1 ½ cups (13 oz jar) marshmallow creme
  • 1 cup Lucky Charms dehydrated marshmallows

  • – For this recipe, I purchased a 13oz jar of marshmallow creme and used about 3/4 of the jar for this recipe. You can add as much or as little as you would like
  • If you prefer not to use whole milk and heavy cream, I suggest using all heavy cream.
