I racked my brain to decide which Brownie Brittle recipe to make next. I’ve made a Strawberry Lasagna, Smore’s Cupcakes, a Grasshopper Pie, a Brownie Icebox Cake and a Hot Chocolate Dip that is just perfect for the holidays. I really wanted to make another cookie, but I’ve already made these Salted Caramel Oatmeal Cookies and Toffee Cookie Cups, so this one had to be different.

These Brownie Brittle Toffee Seven Layer Bars are good anytime of the year, but let’s face it, these would be just great for a holiday cookie exchange! I guess technically these would be six-layer bars, since they are filled with walnuts, coconut, caramel-filled chocolate chips and toffee bits. The sweetened condensed milk is what brings it all together. I’m still calling them seven layer bars, so let’s move on.

I have always loved seven layer bars. My mom actually called them “Nancy Bars”- but I have no idea why. When I moved out on my own, I started my own little notebook with all my favorite recipes from my mom. Nancy Bars were one of my favorite treats to make during the holidays! When I was in high school, I was asked to share a holiday cookie recipe on our weekly newscast. The school news team came to my house and filmed me making a seven layer bar. I should have known then that I was destined to be a food blogger, except it didn’t exist back then. I hope that video never resurfaces. #embarrassing.

I’ve been a long-time fan of Brownie Brittle. I know I can get a chocolate fix without risking all the calories! Did you know they just came out with a peanut butter version and also a few holiday flavors? Gimme gimme gimme!

Since the Toffee Brownie Brittle is in the bottom, and there are toffee bits on top, these bars can get a little sticky. Therefore I highly recommend using a non-stick baking mat, because these bars will stick! If you don’t have a baking mat, then use parchment paper on the bottom and lined up the sides. This will allow you to easily cut the bars without a ton of clean up.

I may or may not share these bars with my coworkers today. I would rather keep them in the freezer to eat whenever I want! These bars do freeze very well, making them perfect for cookie exchanges. Did I mention that? You get the drift.

Brownie Brittle Toffee Seven Layer Bar

Description

These Brownie Brittle Toffee Seven Layer Bars will wow your friends! A Brownie Brittle Toffee crust layered with coconut, walnuts, caramel chips and toffee.

Ingredients

  • 2 1/4 C Brownie Brittle Toffee crumbs (about 3- 4oz pkgs)
  • ½ C Unsalted butter, melted
  • 1 Can Sweetened condensed milk (14 oz)
  • 1 C Walnuts, chopped
  • 1 C Shredded coconut
  • 1 C Caramel filled chocolate chips
  • ½ C Toffee bits

Instructions

  1. Preheat oven to 350°. Line a 9-inch by 13-inch pan with parchment paper (on the bottom and sides) or silicone baking mat.
  2. Melt butter in the microwave 20-30 seconds until completely melted. Pour over Brownie Brittle crumbs and use a spoon to mix butter into crumbs. Using your hands, gently pat the crumbs into the bottom of the baking sheet. Be sure to cover the bottom evenly.
  3. Pour half can of sweetened condensed milk over cookie crumbs
  4. Next, spread walnuts, coconut, chocolate chips and toffee bits over top of milk. Pour the remaining half the can over top.
  5. Bake at 350° for 25-30 minutes until the edges start to turn golden brown. Remove from oven and allow bars to cool completely. I like to refrigerate these before cutting.

    “Nancy” bars because the Magic Bar was a favorite of past president Ronald Reagan’s wife Nancy, and some recipes at that time were titled Nancy Reagan bars. I know because a friend’s mom was known by many in this area for making and sharing these.
