There are few things I love more than pancakes on a Saturday morning. Of course, that stopped happening when I was 10 or 11, but still. My mom had a flat top appliance thing that was just perfect for making a few pancakes at a time. On the rare occasion that I make pancakes for myself and my boyfriend, I am making them one at a time in a skillet. The only problem now is that I prefer pancakes and my boyfriend prefers waffles.

You see, I am a huge breakfast person. If we go out to eat and the restaurant serves all day breakfast, that is probably what I am going order.

I still use the same pancake recipe that my mom made for us when we were kids. I think it might have come from an old Country Cotton cookbook or something like that. I have slowly been tweaking this recipe for different variations of pancakes, like my Healthy Peanut Butter Banana Pancakes. This week, I am tweaking the recipe to create Dairy-Free Eggnog Pancakes.

Dairy-Free Eggnog Pancakes with Silk Soy Nog. These are light, fluffy and full of flavor.

I L.O.V.E. eggnog. As soon as it hits the shelves, I am stocking up. My boyfriend does not like eggnog (he doesn’t even like eggs- sooo yeah), so that means more for me. Recently Silk asked me to try their dairy-free Eggnog. I was certainly skeptical at first, being that I have such a hankering for traditional Eggnog. Turns out that I really enjoyed it.

Their holiday flavor, Silk Soy Nog Original is not quite as thick as traditional eggnog, and it also only has 80 calories or less per serving. It still has the hints of nutmeg and the smooth taste you would find with traditional eggnog. Even more surprising, it is also made without eggs. Silk has a whole line of holiday Nogs and most recently added Silk Almond Nog and Silk Almond Nog Pumpkin Spice. You can visit the Silk website for more information.

To make these pancakes, I swapped out the milk for Silk Soy Holiday Nog. I also added a touch of nutmeg to further enhance the flavor. These pancakes are super easy and only require one bowl to mix. I first measured out all my dry ingredients and then added my wet ingredients, whisked and cooked. For each pancake, I scooped out about ½ cup of pancake batter. Lastly and certain not least, top these off with a maple syrup bath, and don’t be shy! I actually ate them for lunch after I finished my photo shoot, because why not?

The Silk Soy Holiday Nog is a great substitute to make this breakfast dairy-free. Be sure to pick some up before it’s gone! I also thought about using it for waffles. I would even consider doing it without telling my boyfriend, then we will see if he truly doesn’t like eggnog (insert evil laugh here).

Ingredients

  • 1 ¼ C All-purpose flour
  • 1 tbsp Sugar
  • 2 tsp Baking powder
  • 1 tsp Salt
  • 1/2 tsp Nutmeg
  • 1 ¼ C Silk Soy Holiday Nog
  • 1 Large egg
  • 1 tbsp Vegetable oil
  • 1 tsp Vanilla extract

Instructions

  1. In a medium-sizes bowl, combine dry ingredients and stir to combine.
  2. Add all remaining wet ingredients and whisk until batter is smooth.
  3. Heat a small non-stick skillet on medium-high heat. When skillet is warm, spray with cooking spray.
  4. Measure out 1/2 C of pancake batter and pour into pan slowly. Once the pancake starts to bubble on top, flip over and cook for another 60 seconds.
  5. Serve with warm maple syrup.
