Peppermint Rice Krispie Treats

Peppermint Rice Krispie Treats are an easy holiday recipe to share with friends and family! These take less than 30 minutes to make are perfect for gifting. 

If you love Rice Krispie Treats, then you’ll have to try these Peppermint Bark Rice Krispie Treats. Tis’ the season for peppermint, right? These are packed to the brim with your favorite holiday flavors. Lucky for me, my husband only eats traditional Rice Krispie treats, so these are all mine.

This is a tradition recipe with added peppermint extract, white chocolate chips and peppermint chocolate candy. I prefer using Andes Peppermint Crunch baking chips because they’re already chopped into pieces, but if you can’t find them, you can buy the thin ones and cut them yourself or you can use Hersheys candy cane kisses.

These make the perfect holiday treats for neighbors, friends, even the person that delivers your mail will love these. You can wrap these up in some cute gift wrap or bags with a ribbon. Who doesn’t love homemade treats?

Ingredients:

  • Rice Krispie Treat Cereal
  • Mini Marshmallows
  • Butter 
  • Peppermint extract
  • White chocolate chips
  • Semi-Sweet Chocolate Chips
  • Andres Peppermint Crunch baking Chips (or Hershey Candy Cane Kisses)

What type of marshmallows are best for Rice Krispie treats?

I like using mini marshmallows because I think they are easier to melt down than the larger one, but either size type will work. At one point Jet-Puffed was making a peppermint marshmallow which are also perfect for this recipe. 

This recipe uses peppermint mini marshmallows both melted and whole. I saved 1 cup of the marshmallows to mix into the Rice Krispies. That way, when you bite into them you get the added texture of a whole marshmallow.

How to make Peppermint Rice Krispie Treats

  • Melt the butter and marshmallows together
  • Add the peppermint extract and some pink food coloring
  • Pour over cereal, stir to combine and add white chocolate chips and additional mini marshmallows
  • Pack into pan
  • Microwave the chocolate for the top and drizzle over the finished bars 
  • Sprinkle with additional peppermint candy

What’s not to love about Rice Krispie Treats? They are super easy to throw together and can be made in so many different varieties!

White Chocolate Peppermint Rice Krispie Treats

Ingredients

For the Rice Krispie Treats

  • 6 cups Rice Krispie Treats cereal
  • 1 bag (10 oz) mini marshmallows
  • 3 tablespoons unsalted butter
  • 1/4 teaspoons peppermint extract
  • 1 drop pink gel color
  • 1/2 cup (approx. 4 ounces) white chocolate chips
  • 1 cup Andres peppermint crunch baking chips or Hersheys Candy Cane Kisses

For the topping:

  • 1/4 cup (appox 2 ounces) white chocolate chips
  • 1/4 cup (appox 2 ounces) semi-sweet chocolate chips
  • ¼ cup Andes peppermint chips or Hersheys Candy Cane Kisses

Instructions

For the Rice Krispie Treats

  1. Melt the butter in a medium-sized saucepan and add all but 1 cup of the marshmallows and stir until melted, then add the peppermint extract and pink food coloring.
  2. Then, in an extra large mixing bowl pour the melted marshmallows over the cereal. Before mixing, add the white chocolate chips, Andes Peppermint chips and the remaining marshmallows. Stir together to combine.
  3. Grease a 9×13” pan with Crisco or cooking spray and spoon mixture into pan. Use a piece of wax paper or the back of a spatula and press firmly into the pan.

For the topping

  1. In a microwave safe bowl, melt the white chocolate chips at 50% powder in 30 second increments until melted and smooth, set aside. Then melt the semi-sweet chocolate chips.
  2. Drizzle both melted chocolate over top of Rice Krispie treats with a spoon or piping bag then top with additional Andres Peppermint chips. Let set for 30 minutes before cutting.
