Peppermint Rice Krispie Treats are an easy holiday recipe to share with friends and family! These take less than 30 minutes to make are perfect for gifting.
Ingredients
For the Rice Krispie Treats
- 6 cups Rice Krispie Treats cereal
- 1 bag (10 oz) mini marshmallows
- 3 tablespoons unsalted butter
- 1/4 teaspoons peppermint extract
- 1 drop pink gel color
- 1/2 cup (approx. 4 ounces) white chocolate chips
- 1 cup Andres peppermint crunch baking chips or Hersheys Candy Cane Kisses
For the topping:
- 1/4 cup (appox 2 ounces) white chocolate chips
- 1/4 cup (appox 2 ounces) semi-sweet chocolate chips
- ¼ cup Andes peppermint chips or Hersheys Candy Cane Kisses
Instructions
For the Rice Krispie Treats
- Melt the butter in a medium-sized saucepan and add all but 1 cup of the marshmallows and stir until melted, then add the peppermint extract and pink food coloring.
- Then, in an extra large mixing bowl pour the melted marshmallows over the cereal. Before mixing, add the white chocolate chips, Andes Peppermint chips and the remaining marshmallows. Stir together to combine.
- Grease a 9×13” pan with Crisco or cooking spray and spoon mixture into pan. Use a piece of wax paper or the back of a spatula and press firmly into the pan.
For the topping
- In a microwave safe bowl, melt the white chocolate chips at 50% powder in 30 second increments until melted and smooth, set aside. Then melt the semi-sweet chocolate chips.
- Drizzle both melted chocolate over top of Rice Krispie treats with a spoon or piping bag then top with additional Andres Peppermint chips. Let set for 30 minutes before cutting.
