I’ve been holding out on you guys because these Salted Caramel Pudding Cookies are INSANE. These soft-baked cookies are loaded with salted caramel chips and sprinkled with a touch of salt.
Cookie season is quickly approaching and I am claiming it right now, these cookies are making their way into my holiday cookie basket.
Pudding cookies are known to be extra soft, but these cookies use baking powder which means that they really hold their dome shape. You don’t have to worry about them spreading too thin and there’s no refrigeration required.
Last Christmas season, I spotted Hershey’s Salted Caramel baking chips and like any food blogging hoarder, I snatched up multiple bags in fear that I wouldn’t have another chance to find them.
We’re weird. We know and accept that.
These chips have been sitting around in my cabinet waiting to find a home ever since. Lucky for you these babies are back on the store shelves and I even noticed that Ghirardelli is also making a caramel chip now. I was beyond excited.
Another line of products I love are the Jell-O Simply Good instant pudding mixes. They have replaced nearly all of my other pudding mixes. I think the flavor is much better than the regular pudding mixes and they are made from all natural ingredients. Caramel pudding is one of my favorites.
It’s almost like these Salted Caramel Pudding Cookies were meant to be.
I did a double batch of these cookies so I had plenty to share and I made half of them with regular chocolate chips, and guess what? Just as good. As long as you sprinkle a little coarse sea salt you’re still getting that same effect.
These cookies also freeze well, so feel free to keep some extras on hand for when the craving hits!

Description
Salted Caramel Pudding Cookies are soft-baked cookies loaded with salted caramel chips and sprinkled with a touch of salt.
Ingredients
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 package (3.4oz) Instant caramel pudding
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 bag salted caramel baking chips
- Additional sea salt for garnish
Instructions
- Pre-heat the oven to 350° F. Line a baking sheet with parchment paper or a silicon baking mat.
- Allow the butter to come to room temperature for about 20 minutes. Cream together butter, granulated and brown sugar until smooth.
- Add the eggs one at a time, mixing thoroughly. Next, add the vanilla extract and mix into batter.
- In a separate bowl, combine the caramel pudding, flour, baking powder and salt and stir to combine.
- Slowly add dry ingredients into the batter and mix slowly just until dough starts to form. Quickly add the salted caramel chips and mix until incorporated into the dough.
- Drop 2 tablespoons of cookie dough (per cookie) onto baking sheet. Sprinkle with sea salt. Bake for 12-14 minutes. Remove from oven and allow to cool on the baking sheet for 15 minutes.

I have made this recipe 4 or 5 times now and it is always a hit! My boyfriend brought home salted caramel baking chips last year and I found your recipe while searching for a way to use them. I substituted vanilla pudding because I couldn’t find caramel but everyone who has tasted these cookies says they are amazing so I guess it’s still pretty good. My boyfriend actually special-ordered more salted caramel chips when he couldn’t find them in the store he first got them, just so I could make these cookies again! Thank you!

Hi – I’m from the UK, so when you say Instant Caramel pudding, would that be equivalent to our Angel Delight?
I’m not familiar with Angel Delight, but from a quick Goggle search it seems like it would be equivalent or close to American pudding
I made theses last week as a “taste test” for a bake sale. Mine also did not spread much, i did leave them domed. I couldn’t find the caramel pudding either, but i did find Godiva chocolate caramel pudding. These were a HIT! Making them today for the bake sale!!

Hi Sidney, these cookies actually don’t spread much at all, mine do have quite a dome on them. Sometimes I will press the down a little flatter before baking.
I want to make this cookies but I am unable to find caramel pudding in our stores. Is there another flavor I can use that would work???? Joni
