Confetti Cake

This fun birthday cake features a rich, fluffy vanilla layer filled with colorful sprinkles and topped with a creamy rainbow chip frosting!

What is a Confetti Cake?

Granulated Sugar Pure Vanilla Extract Sour Cream All-Purpose Flour Buttermilk  Cream Cheese Sprinkles White Chocolate Bar

Key Ingredients:

Cream together sugar, oil, butter, eggs, vanilla, and sour cream.

Mix the remaining dry ingredients, sift them, and add them to the wet batter, along with the buttermilk.

Fold the sprinkles into the batter.

Divide the batter between two  8” cake pans lined with parchment paper. Bake for 25-32 minutes.

Let the cakes cool for 15 minutes, then gently cut around edges. Invert onto wire rack and let cool completely.

Melt white chocolate until smooth, divide it into 4 bowls and dye it four different colors using gel food dyes.

Spread colored chocolate on parchment paper, allow it to set, and then chop it into small pieces.

Whip butter until creamy, then add cream cheese, powdered sugar, vanilla, salt, and chopped colored chips.

Spread frosting on a plate. Then add the first cake layer, top it with frosting and place the second cake layer on top.

Spread a thin layer of frosting over the top and sides of the cake.  Then use an offset spatula to frost the outside.

Add more sprinkles and decorate the cake as desired. Then enjoy!
