This easy recipe features a mini chocolate cake made from moist 6-inch cake layers filled with fudgy chocolate frosting!
Oil Sour Cream Cocoa Powder Brewed Coffee Frosting
Cream the sugar, oil, eggs, vanilla, and sour cream. Then mix dry ingredients and brewed coffee into the wet ingredients.
Pour batter into two greased and floured 6" cake pans and bake for 20-24 minutes.
Remove from oven and allow the cakes to cool completely.
While the cakes are cooling, whip together butter, cocoa powder, vanilla extract, powdered sugar, and heavy cream.
Level the cakes by trimming off any high domes using a serrated knife or a cake leveler.
Pipe frosting over bottom cake layer, then place second cake layer over top, and pipe frosting over top and sides.
Get creative with the remaining frosting and decorate as desired. Enjoy!
