Finally!! The day I’ve been waiting for- the fiancé is here for GOOD! A week after we moved our stuff, he had to go back to California to finish getting our house in order to rent out and take care of some things, so he’s been gone for 2 weeks.
Normally our visits were every 3 weeks apart but this short time felt just as long. I finally had all our stuff in my house but it was still so lonely without him. It was so weird driving back from the airport yesterday knowing I wasn’t going to be dropping him of 3 days later. SO exciting!
BUT we only have 2 ½ days together because on Wednesday I am taking off for Utah for the Everything Food Conference. I can’t wait to be reunited with my bestie and a few of our friends. Plus I’ll be joining my friend at ADA Mideast and we will be serving up samples of my Lemon Coconut Macaroon Cheesecake. So if you’re going to be at the conference, make sure to stop by and say hi on Thursday!
Since the beau is back in town, I decided to celebrate with these Tequila Pineapple Punch Cocktails. This is the perfect cocktail for me. It not overly sweet, it’s quite refreshing and you can hardly taste the alcohol, which means two of them is just enough to give me a little buzz.
This Tequila Pineapple Punch is made with tequila, coconut rum, pineapple juice a splash of lemon juice and a little seltzer to top it off. After the first time I made it, I decided an extra half-ounce of tequila was necessary just for a little kick. If you felt it is too strong, you could reduce it from 2 ounces does to 1 ½.
I first had this drink at a local bar in Portland called Clyde Commons when Lindsay came to visit me last summer. And although I haven’t finished parts 2 and 3 of my Portland food guide, I will tell you that this was one of the cocktails we had. It was the punch of the day and served in this adorable vintage glassware. I had to recreate the cocktail for myself.
For this recipe, it makes only one drink, but it can easily be multiplied. I normally mix 2 at a time, because the seltzer water is not until the end, so you can mix everything else together first. I am not the type that has coconut rum lying around my house, so I usually get a pint or a couple of the airplane size bottles, which is enough to make 2 drinks.
This is the perfect way to roll into May. Cheers my friends.

Description
Cool off this summer with Tequila Pineapple Punch it’s made with tequila, coconut rum, pineapple juice, a splash of lemon juice and a little seltzer to top it off.
Ingredients
- 2 ounces tequila
- 1 ounce coconut rum
- 1 ½ ounces pineapple juice
- ¼ ounce lemon juice
- 3 ounces seltzer
Instructions
- Fill a large cocktail shaker, combine the tequila, coconut rum, pineapple juice and lemon juice. Shake well.
- Pour over ice and top with seltzer and a lemon wedge.
Notes
I added some sugar to the rim of the glass by running a lemon wedge around the edge and dipping the glass into some sugar. It’s totally optional.
I prefer to use white tequila but once I ran out I started making it with gold tequila and it was just as good. I also buy the small cans of pineapple juice.
This is my favorite mini measuring cup, perfect for cocktails!

Could you use Sprite instead of seltzer?
