S’mores week has come to an end. It’s kinda sad really, because I have truly enjoyed seeing everyone’s creations! Be sure not to miss my S’mores Lasagna and my S’mores Ice Cream Sandwiches. However, there is one more thing to celebrate. My friend BBF (best blogging friend) Lindsay from Life Love and Sugar is turning 2 today! Celebrating “blogiversaries” it totally a thing in the blogging world. Stand by for a little celebration next week!

In the mean time, let’s close out S’mores week with Bourbon Bacon S’mores Cookies. This cookie is packed with a few of my favorite thing: toffee, chocolate, bacon, bourbon and marshmallows. I know it’s a mouth full. However, this combination is literally amazing.

My Bourbon Salted Caramel Cookies were some of the best cookies I made lately. Those inspired me to make another version. First of all, bacon and chocolate, hello! It’s one of my favorite combination. Plus you throw in a little bit of toffee for some added sweetness. I decided to add some mini marshmallows into the cookies for the added s’mores factor.

In your sandwich, you’ve got a bourbon infused chocolate sauce and a toasted marshmallow. Now you love marshmallows, I might suggest to put 2 of them in the middle of the cookies since they are kind of large. This cookie recipes makes 3 ½ dozen cookies, so you will have about 20 cookie sandwiches. I used a kitchen torch for my marshmallows, but if you don’t have one, you can also toast these in the oven.

Now you don’t HAVE to make yourself a sandwich, but why wouldn’t you? These cookies are plenty good on your own. Since these cookies are filled with ooey gooey marshmallows and toffee, I would highly suggest to bake them on a cookie sheet lined with a baking mat or parchment paper. Some of the toffee or marshmallow melt when baking. That’s totally fine by me though!

If you are looking for an alcohol free cookie, just omit the bourbon and add 3 more teaspoons of vanilla to the cookie dough batter. For the chocolate sauce, add one extra tablespoon of heavy whipping cream. It’s is easy to substitute it out!

Bourbon Bacon S’mores Cookies

  • Prep Time: 40 minutes
  • Cook Time: 15 minutes
  • Total Time: 55 minutes
  • Yield: 3 1/2 Dozen cookies

Description

This cookie is packed with a few of my favorite thing: toffee, chocolate, bacon, bourbon and marshmallows.

Ingredients

  • 1 C (2 sticks) Unsalted butter
  • 1 C Light brown sugar
  • 3/4 C Sugar
  • 2 Large eggs
  • 1 1/2 oz Bourbon
  • 1/2 tsp Pure vanilla extract
  • 2 1/2 C Flour
  • 2 1/4 C Quick Oats
  • 1 tsp Baking soda
  • 1 C Milk chocolate toffee pieces
  • 1 C Mini marshmallows
  • 1 C Chocolate chips
  • 3/4 C Bacon pieces

For the filling

  • 12 oz Milk chocolate
  • 6 tbsp Heavy whipping cream
  • 1 oz Bourbon
  • 20 Large marshmallows

Instructions

  1. Cook bacon (3 or 4 stripes) either on the stove top or in the oven until crisp. Set aside.
  2. Soften butter in the microwave for 10-15 seconds. Combine softened butter with brown sugar and granulated sugar. Beat on medium speed until well combined, 2-3 minutes.
  3. Add eggs, bourbon and vanilla extract. Beat until well incorporated.
  4. In a separate bowl, combine flour, quick oats and baking soda. Stir to combine and slowly add into batter, mixing on low speed until dough starts to form.
  5. Add toffee pieces, mini marshmallows, chocolate chips and bacon pieces. Mix into dough.
  6. Chill Dough 15-30 minutes. Preheat oven to 350°F.
  7. Spoon 3 tablespoons of dough onto a parchment lined baking sheet. Bake for 15-18 minutes until cookies start to turn light brown. Remove from oven and allow to cool for 10-15 minutes before moving onto a wire rack to cool.
  8. To make the sandwiches, combine milk chocolate and heavy cream in a microwave safe bowl. Microwave for 60 seconds. Whisk until smooth. Add bourbon and whisk into chocolate sauce. Spoon chocolate sauce onto the backside of a cookie.
  9. Microwave the marshmallows on parchment paper, 10 at a time. Microwave for 10 seconds. Gently toast with a kitchen torch. Spoon marshmallows onto the backside of a cookie.
  10. Smoosh together two cookies, one with a marshmallow and one with chocolate sauce to create a sandwich.

Notes

Chill dough before baking.
