Football Cookie Cups

I will be the first one to tell you that we are not the most sport-enthusiastic household, unless snowboarding can be part of that consideration. However, I love a good sports rivalry, playoff games and of course, championship games like the super bowl. For those occasions, I am that person who is shouting and jumping up and down in front of the TV while my husband stares at me with a confused look.

The sports industry was once a very important part of my full-time so I do tend to pay attention to games that relate to my work, but you won’t find us planted in front of the TV watching football on Sundays all winter.

However, that is VERY much the household I grew up in. Thanksgiving always revolved around the football games. My family members are loyal Patriots and Red Sox fans, and when my brother recently got married to a Broncos fan, this came up several times in their vows.

I am also the first one to sit down for a game if it involves lots of good cheesy foods, handfuls of chips and guacamole, or other game day related foods, desserts, or otherwise. Or you’re having a super bowl party? Great, I’ll be right over.

I will definitely be making these Football Cookie Cups for the next Super Bowl party I attend. These are mini sugar cookie cups filled with a green colored vanilla frosting and some footballs made with almonds and candy melts.

These cookie cups are SO easy to make! There is no stress involved here. Thanks to my friends at Krusteaz, I just grabbed a box of their Butter Vanilla Sugar Cookies Mix and my favorite mini muffin pans. T

he cookie mix takes all of 5 minutes and only requires some softened butter and an egg. About 15 minutes later you are pulling these cookies out of the oven. The cookies are buttery, and quite soft and chewy. You could substitute another Krusteaz cookie mix too, such as the Snickerdoodle (our favorite!) or the peanut butter flavor.

While the cookies are baking, you can make a batch of my perfect vanilla frosting. The frosting is whipped and incredibly easy to pipe. To make the football field grass filling, you’ll need a piping bag, and a piping tip 233.

After you dye the frosting green, you just pipe it directly into each cookie cup. I tend use a gel type dye because it is thicker and doesn’t make the frosting thin or runny. You’ll probably have frosting leftover. In fact, if you make a double batch of cookies,  there will probably be enough frosting for two batches.

The adorable little footballs are made with whole almonds and candy melts! So easy! I first saw these on my friend, Beth’s, blog, who happens to have the most adorable game day themed desserts.

I prefer to use candy melts instead of melted chocolate because it hardens quicker and doesn’t get soft to the touch. I find this works best with a size 1 piping tip.  Once they are dry, just place an almond in the center of the cookie cup.

I decided to also add the goal posts to the cookie cups because it makes it that much cuter! I also use the same candy melts for these. Grab a piece of parchment paper for this because the candy melts won’t stick to it.

Although it does help to have an angled spatula to lift them off the parchment paper. I tested these with several different size piping tips, but a size 3 works best to get them thick enough but not too thick. Again, you can just gently stick these upright into the frosting. However, you should definitely make yourself extras because some may break.

You can prepare these the night before you party AND decorate them! Just keep them in an airtight container. You guests will be so impressed with your fancy Football Cookie Cups!

Ingredients

For the cookie:

For the frosting:

  • 3/4 cup unsalted butter, slightly softened
  • 2 cups powdered sugar
  • 1 tablespoon heavy whipping cream
  • ½ teaspoon clear vanilla extract
  • Green food color gels

For the decorations:


Instructions

  1. For the cookies: Preheat the oven to 350°F and spray a mini muffin sheet with cooking spray. In a medium-sized mixing bowl, combine cookie mix, butter and egg and beat until well mixed.
  2. Scoop 2 Tablespoons of cookie dough into each mini muffin cavity.
  3. Bake 12-14 minutes until the cookie dough is lightly golden brown. Allow the cookie cups to cool for 15-20 minutes. While the cookies are still warm, use the back of a measuring spoon to press into the center of each cookie to make a cup shape.
  4. Remove cookie cups gently and allow to cool completely.
  5. For the frosting: Cut the butter into 1 tablespoon-sized pieces and whip in a standing mixer 5-7 minutes, until the butter looks light in color. Add powdered sugar and mix on low speed until incorporated, then add heavy whipping cream and vanilla extract. Decrease speed to medium-high and beat for 3-5 minutes to whip additional air into the frosting. It should be light and airy.
  6. Add 2-3 drops of green food coloring into the frosting and stir until well combined.
  7. Use a piping bag fitted with a tip 233, pipe the grass into each cookie cup.
  8. For the decorations: Microwave candy melts in 20 second increments until they start to melt, stirring each time. Stir until completely smooth.
  9. In a piping bag fitted with a size 1 piping tip, pipe a thin line on the almonds to imitate a football. Allow the candy melt line to harden.Change the piping tip to a size 3 to pipe the goal posts onto a piece of parchment paper. Allow the chocolate goal posts to harden and place them onto the cookie cups. Store in an airtight container.

      Could you use Tootsie rolls? Maybe you can flatten them out with a rolling pin and then cut the shape out with a knife? It’s a little more work but you get a similar effect!
