These Easter Bunny Truffles are such a fun and creative Easter dessert idea for you to make for the kids. The brownie truffle is coated in white chocolate and rolled in shredded coconut. Follow these step-by-step instructions to make this homemade Easter Candy.

Can you even handle how cute these Easter Brownie Bunny Truffles are? They’re a brownie truffle is coated in white chocolate and rolled in shredded coconut then decorated with easy ice decorations.
I love cute Easter desserts- even if it takes a little effort. These are not the quickest dessert to throw together because there’s a few steps involved, but trust me when I say that your friends will be totally impressed! It’s can also be a fun activity for you to do with your kids- just be prepared for a little mess.
How to make the brownie truffle filling
For these truffles I used a boxed fudgy brownie mix since it was quick and easy. If you want to save time, you can try buying prepared brownies, but they need to be fudgy enough that they’ll stick together.
- Prepare the boxed brownie mix in a 9×13-inch pan and cool completely.
- Cut off the edges of the brownie (and eat them, duh!)
- Use a fork to break apart the rest of the brownies into crumbs.
- Then use a medium cookie scoop to scoop and form them into brownie balls with a flat bottom.
- Freeze for at least 2 hours until hardened.
I think it is so much easier to dip them if they are frozen. So you can prepare the brownies in advance and freeze them until you are ready to dip them! It really helps break up the process of preparing and assembling.
I liked the brownies (as opposed to cake balls) because they have more structure and don’t need any frosting to hold them together. However you can certainly make these as cake balls too.
Dipping the brownie truffles
I used a package of Wilton Bright White Candy melts and a melting pot. I love my melting pot because it keeps the candy at an even temperature. Once the candy melts are fully melted, change the temperature settings to warm.
If you don’t have a melting pot, you can definitely just melt them in the microwave. The candy melt should be warm but not hot and thin enough to drip off your spoon. Since the brownies are frozen, the candy will harden very quickly. Test the first two to be sure it won’t crack. If the chocolate cracks, it is too hot and you need to wait for it too cool a little more.
I recommend adding Crisco shortening to the candy melts because it helps them stay very thin and smooth, which can be easier for dipping. Do this after the melting the candy melts, adding 1 tablespoon at a time and stirring until you reach the desired consistency.
- Use a toothpick to pick up and handle the frozen brownie balls and then dip and swirl them in the candy melts. Gently tap the toothpick on the edge of the bowl to remove any excess chocolate.
- Place the brownie on a silicone mat or parchment paper to dry. It is important not to use a wire rack for these because the bottom of the truffle will stick to the wire rack.
- Used a small knife to cover the hole from the toothpick with a dab of the white chocolate.
- If you want to make your truffles with coconut, you need to do it immediately after the brownies are dipped. Just drop the brownie truffle into a bowl of shredded coconut and gently roll it around. Then place it on your mat to dry.

Decorating the Easter Bunnies
For the accents on these truffles, I used Wilton Icing decorations, some homemade bunnies ears using cnady melts and some mini marshmallows for the tails. It’s best to add the decoration once all your truffles are dipped and set. However, you can prepare the bunny ears while your brownie balls are in the freezer so that everything is ready to go.

- Tape the template to a small baking sheet, and then tape a piece of parchment or wax paper on top.
- Melt 10 pieces of white candy melt microwave and stirred until smooth. Allow too cool to the touch. Pour into a 12-inch piping bag fitted with a coupler and a size #2 open round tip.
- Repeat the above step with 10 pieces of pink candy melts. You can either add the pink while the white candy melts are still wet, or you can add them after if you only have 1 piping tip.
- Use the template for the bunny ears and trace and fill the ears with the white candy melts, then draw the middle of the ears with the pink candy melts
- Also a toothpick can your best friend to help clean up the edges or the shapes of the ears if needed!
- Once they’re all piped, toss the tray in the refrigerator to help the chocolate set.
To add the bunny ears to the truffles:
- Make a small cut in the top of your truffles using your angled spatula or a sharp knife.
- Place a tiny bit of white candy melts onto the bunny ears and place them into the slits in the truffles. They actually hold up pretty well, but don’t lift them by the ears! No bunny likes that-harhar.
To add the remaining decorations
- Add a tiny bit of the candy melts as an adhesive to the back of the glasses and bow ties and place on the truffle
- Attach the bunny tails with a little bit of the candy melts as well
- For the mouths of the bunnies, I had some leftover heart shaped sprinkles from Valentine’s day, but you could also use your pink candy melts
After I finished these truffles, I kept them refrigerated because it was hot where I live, but they do not need to be refrigerated. You should enjoy these 1-2 days after you prepare them.
I really hope you guys will give these a shot! I am not a huge fan of chocolate making because I feel like they are never very pretty. Well guess what, the coconut hides all your flaws!

- 1 box Fudge brownie mix
- Ingredients listed on the box (egg, oil water)
- 1 bag Wilton Bright White Candy Melts
- 2 oz Pink Candy Melts (optional)
- 3 tbsp Crisco Shortening
- Wilton icing decorations
- Sweetened shredded coconut
- Mini Marshmallows
- Heart shaped sprinkles
- Prepare brownie mix according to the instructions on the box. Allow to cool completely.
- Cut off the hard edges. Use a fork to break apart the brownies into crumbs. With a medium size cookie scoop (approximately 2 tablespoons), spoon the brownie crumbs and press into the cookie scoop. Place with the flat side down on a baking sheet lined with a silicone mat or parchment paper.
- Freeze for a minimum of 2 hours or longer if prepared in advance.
- Prepare the bunny ears before starting the truffles. Take about 3 oz (10 pcs) of White Candy Melts and melt in the microwave. Stir until completely smooth. Repeat with pink candy melts.
- Use a small piping bag with a coupler and a size #2 round tip and pipe the bunny ears using the template provided above. Fill in the middle with the pink candy melts. Refrigerate the bunny ears to harden faster.
- Pour remaining candy melts into melting pot. Use the “melt” setting until white candy melts are melted and smooth. Add Crisco 1 tablespoon at a time to thin out the candy melts until there is smooth drip from the spoon. Using a spatula, stir until well mixed. Turn setting down to “warm” on your melting pot.
- Remove brownies from the freezer. Use a toothpick to insert into the brownie, dip and swirl in the candy melts. Tap off excess chocolate.
- Place on a baking sheet lined with parchment paper or a silicone mat. Gently twist toothpick to remove. Take a knife to dab a drop of candy melts to cover the hole from the toothpick.
- Optional: to cover the truffle in coconut, use your hands to immediately pat the coconut into the chocolate before it hardens. It will harden quickly. Allow the truffles too set completely.
- To attach the bunny tails, gently dab one side of the mini marshmallow with candy melts. Press onto the back side of the truffle. It will cool quickly.
- To attach the bunny ears, gently insert the knife into the top of the truffle. Take one ear and gently dip the end into the candy melts. Lightly press into the top of the truffle.
- To attach the icing decorations, dab the backside of the icing decorations with candy melts and gently press onto the truffle.
- For the bunny nose, you can either use a heart shaped sprinkle or use your pink candy melts to pipe the nose. Attach the sprinkle by using a tiny drop of the candy melts.
- Refrigerate truffles if not serving within a day.
- The brownies can be prepared and frozen in advance. It took me 1-1.5 hours to complete the truffles from start to finish after the brownies were frozen. Be sure to prepare the bunny ears in advance of dipping the truffles. This will save time.
- If the candy melts crack once you dip the brownies, that means the chocolate is too hot and it need to be cooled before proceeding.
- Download the template for the bunny ears. I recommend taping it to a baking sheet and then taping a piece of parchment or wax paper over top.
