This cake is a vanilla bundt cake filled with a funfetti Oreo cheesecake filling. It’s topped with a cream cheesecake glaze. You can see it's nice and dense and loaded with plenty of sprinkles.

I just returned from a super quick trip to Sacramento where I had the pleasure to celebrate my friend Dorothy’s 40th birthday. In classic form, there were plenty of unicorns, sprinkles and champagne. I haven’t slept that little in forever and I’m sure I’ll need weeks to recover.

I think I’ll begin my recovery with a giant slice of this No-Bake Chocolate Marshmallow Pie. The Oreo crust is filled with a fluffy chocolate marshmallow mousse and topped with whipped cream.

Other names I considered for this pie: Dreamy Chocolate Pie, Shove-It-In-My-Face pie, and Heavenly Chocolate Pie. This is probably the closest thing I’ve made to the Wendy’s Hershey Pie, and in fact a few of my friends that tried this also made similar comments.

This Chocolate Marshmallow Pie is the third in a series of marshmallow pies which previously included both Biscoff and Nutella. These pies all have a few things in common: light and fluffy texture, very smooth consistency and a melt-in-your-mouth kind of bite.

I don’t know what it is about this magical marshmallow creme that just transforms any type of filling into a fluffy cloud of dessert heaven. Are you ready to make this pie yet?

I opted for my standard no-bake crust here because I am the worst pie crust maker, despite the fact that I’ve taken a number of classes to try and teach myself.

The no-bake crusts are just my jam. Pick your favorite sweet cookie or cracker, toss in some melted butter and press it into the springform pan. Boom. Done. If you’d like a little more help with the no-bake crust, then be sure to watch my video tutorial.

Most people think you need to bake the crust but it’s not necessary. It is a good idea to refrigerate or freeze the crust before you fill it, which will help prevent the crumbs from falling apart when you’re adding your filling on top.

The hardest part of making this pie is waiting a few hours before you can slice it and dig in. Seriously though, it’s like, real hard. But once it’s ready, it pretty much disappears instantly and it’s only a matter of time before you’re making it again.

No-Bake Chocolate Marshmallow Pie

This No-Bake Chocolate Marshmallow Pie is heaven on earth!  The Oreo crust is filled with a fluffy chocolate marshmallow mousse and topped with whipped cream.

Ingredients

For the crust:

  • 1 package (14oz) Oreos (save 2 Oreos for garnish)
  • 8 tablespoons (1 stick) unsalted butter, melted

For the filling:

  • 4 ounces semi-sweet chocolate, melted
  • 8 ounces cream cheese, at room temperature
  • 2 tablespoons granulated sugar
  • 1 jar (7oz) marshmallow crème
  • 1 cup heavy whipping cream
  • 23 tablespoons cocoa powder
  • 4 ounces chocolate bar, chopped

For the topping:

  • 1 cup heavy whipping cream
  • ¼ cup + 2 tablespoons powdered sugar
  • Hot fudge sauce for drizzle, optional
  • 2 crushed Oreos for garnish, optional

Instructions

For the crust:

  1. Prepare a 9-inch springform pan by lightly greasing the edges of the pan with cooking spray, and then wiping gently with a paper towel.
  2. Grind the cookies into a fine crumb using a food processor or blender.
  3. In a small bowl, melt the butter in the microwave for 30 to 45 seconds. Pour the melted butter over the cookie crumbs and stir until the crumbs are well coated.
  4. Pour the crumbs into your springform pan and press firmly into the bottom and up on the sides to create a thick crust. Refrigerate or freeze the crust while you are preparing the filling.

For the filling:

  1. In a microwave-safe bowl, melt the chocolate in 30 second increments, stirring occasionally until the chocolate is melted and smooth.
  2. In a large mixing bowl, combine the room temperature cream cheese and granulated sugar. Beat until smooth.
  3. Next add the melted chocolate and mix until combined, scraping down the bowl as needed. Proceed to add the marshmallow crème and continue mixing until smooth.
  4. To prepare the whipped cream, place the metal mixing bowl in the freezer for 5-10 minutes to chill.
  5. Pour the heavy whipping cream into the chilled bowl and use an electric mixer to beat the heavy cream on medium-high speed until the cream starts to thicken. Slowly add the cocoa powder and continue beating on high speed until stiff peaks form.
  6. Fold the prepared whipped cream into the cream cheese filling and stir to combine.
  7. Chop the chocolate bar into small pieces and fold into the filling. Pour the filling in the prepared crust and spread evenly. Refrigerate for 3-4 hours until the filling is set.

For the topping:

  1. Place the metal mixing bowl in the freezer for 5-10 minutes to chill. Pour the heavy whipping cream into the chilled bowl and use an electric mixer to beat the heavy cream on medium-high speed until the cream starts to thicken. Slowly add the powdered sugar and continue beating on high speed until stiff peaks form. Spread the whipped cream over the pie.
  2. Garnish with crushed Oreos and drizzle with hot fudge sauce. Serve chilled.

Notes

It’s important to use high quality chocolate for this recipe to achieve the best results.
